Chocolate Chunk Cookie Sandwiches

It doesn’t happen very often, but sometimes I have a stroke of genius. Sometimes I get this wild, crazy idea in my head and I just go for it. Sometimes it works out, sometimes it doesn’t, but I’m pretty sure this time it was a real winner.

Last week I saw Jessica at How Sweet It Is post these amazing Chocolate Chip Cookie Peanut Butter S’mores on Instagram. And then on her blog. They haunted my thoughts and dreams. All I wanted were those s’more and unfortunately I had none of the ingredients in my apartment.

Then I started seeing ice cream sandwiches all over Pinterest and I started craving those. It’s been so long since I’ve made ice cream sandwiches. Maybe three or four years? It’s ridiculous, I know. But they’re a lot of work. Don’t get me wrong, they are completely worth it in the end, but A LOT of work.

And since the weather here in New Jersey has been anything but stable lately, I figured making anything with ice cream may not be the best idea. When you wake up and it’s snowing one week and shorts weather the next, ice cream sandwiches could have been the worst idea ever.

Well maybe not. I could have just eaten them while wrapped in a blanket, but that would be a little insane.

So instead, I woke up Saturday morning and decided that the only way to solve my cookie sandwich/s’mores issue was to come up with a devilishly better idea. And by devilishly, I mean slathered in icing. Yep, I made homemade chocolate chip cookies and sandwiched them together with homemade vanilla buttercream.

And this is no ordinary buttercream, it’s the greatest freaking buttercream on the planet. I will never use any other recipe again. I’m thinking of eating it every day for dinner. Just a big bowl of icing. Totally normal, right?

Chocolate Chunk Cookie Sandwiches
Cookies are from the one and only Tyler Florence and icing from Savory Sweet Life

Yield: 1 dozen cookies and 2.5 cups of icing
Prep Time: 35 minutes
Cook Time: 20 minutes

Ingredients:
Cookies
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter, at room temperature
1/2 cup sugar
3/4 cup brown sugar, packed
1 teaspoon vanilla extract
2 eggs
1 bag (11.5 oz) chocolate chunks

Vanilla Buttercream
1 cup (2 sticks) unsalted butter, at room temperature
3-4 cups powdered sugar
1/4 teaspoon salt
1 tablespoon vanilla extract
3-4 tablespoons heavy cream

Directions:
Cookies
Preheat oven to 350 degrees.

In a large bowl, combine flour, baking soda, and salt and mix together. Set aside.

In the bowl of a stand mixer, combine butter, sugar, and brown sugar. Cream together until they are light and fluffy. Scrape down the sides of the bowl with a spatula and then beat in the eggs and vanilla. Once they are combined, add in the dry ingredients in batches. Mix just until the dry ingredients are incorporated. Remove from the mixer and fold in the chocolate chunks.

On a lined or greased baking sheet, scoop cookie dough using a cookie scoop or tablespoon. Press down the tops of the cookies lightly and bake for 12 minutes. Remove from the oven and allow them to cool on the sheet for 3-4 minutes, then move to a cooling rack.

Buttercream
While the cookies are cooling, make the buttercream. Add butter to a stand mixer and beat until smooth. Add in 3 cups of the powdered sugar and mix on low until it is incorporated. Then add in the vanilla extract, salt, and 2 tablespoons of heavy cream and beat until they are combined. If the frosting needs to be stiffer, add in the remaining powdered sugar. If it needs to be thinner, add the remaining tablespoon of heavy cream.

Assembly
Once the icing is made, spread a heaping tablespoon or so between cookies that are relatively the same size. Serve and enjoy!

  1. Totally backing up the “this-buttercream-will-change-your-life” sentiment. Freaking delicious. And it’s perfection with these cookies…somehow I was able to stop myself at one, but I wish I hadn’t!

  2. So I’m never one for nightmares…but if you get haunted by cookies you need to continue having those dreams. If it means I get to see more of these sandwiches! :D Probably a good idea to skip the ice cream (what with the dreary cold disgustingness outside right now) but vanilla buttercream is perfection no matter what day of the year!
