Tequila Lime Chicken Fajita Salad with Chile Lime Vinaigrette

It’s official: I’m done with finals. Not that I really had any classes this semester seeing I was taking three online classes and only one that met once a week. But yeah, I’m done. I’m done with exams forever.

That’s so weird to think about. I feel like I’ve been studying for my entire life. Every night I would come back from class to a ton of assignments and exams. But now that’s gone forever.

Not that I’m complaining. Oh no, I am so thankful that exams are a thing of the past. But it just hasn’t hit me yet. Will it soon? Because I’m still feeling major anxiety over finals that don’t exist. That’s normal right? I think I also can’t believe it because that means I will be entering the real world soon. Eeeek…

I mean I’m actually really looking forward to the real world. Recently the opportunity arose for me to work full-time at my uncle’s catering business, expanding his clientele and cooking at the same time. Business and cooking, two of my passions. So really I’m extremely lucky that I’ll get to do something I love, but still it’s the real world. Bills exist there. I don’t care for bills.

But lets ignore that and talk about something that does not put me on edge: dinner. Especially healthy dinners. Healthy salad dinners that make me feel better about my life choices but still taste amazing. Those are the only types of healthy dinners I enjoy.

I really love vegetables, but salads every night for dinner can get quite boring. Ridiculously boring actually.

That’s why I love testing out new salad ideas and flavor combinations. There’s so much more you can do then just throw some chicken on romaine with caesar dressing. You can make homemade¬†vinaigrettes with rice vinegar, chile oil, and lime juice. Yum. Dead. Salads may never be the same again.

Tequila Lime Chicken Fajita Salad with Chile Lime Vinaigrette
Combination of How Sweet It Is’ Tequila Lime Chicken & Fajita Salad

Yield: 2 salads
Prep Time: 2 – 24 hours (marinating time)
Cook Time: 15 minutes

Tequila Lime Chicken
2 chicken breasts
1/3 cup tequila
1/4 cup olive oil
1/4 cup lime juice
1/2 teaspoon salt
1/2 teaspoon pepper
Zest of 2 limes

1/2 red pepper, thinly sliced
1/2 green pepper, thinly sliced
1 tablespoon olive oil
1 bag of romaine lettuce
1/2 cup black beans
1/2 cup corn

Chile Lime Vinaigrette
2 tablespoons olive oil
1 tablespoon rice vinegar
1/2 tablespoon chile oil
2 teaspoons honey
Juice of 2 limes
Salt and pepper to taste

Tequila Lime Chicken
Whisk together tequila, olive oil, lime juice, salt, pepper, and lime zest until they come together. Filet each chicken breast, so you have two thin slices (“not two fatties” as Meg calls them) and place in a large ziplock bag and pour the marinade over it. Marinate in the fridge for 2-24 hours, flipping the chicken a few times.

Remove the chicken from fridge and heat a large skillet. Coat the pan in olive oil and cook the chicken so that both sides are brown and no pink remains in the middle. While the chicken is cooking, assemble your salad. Place the romaine lettuce in a bowl or on a plate, cover with black beans, corn, peppers, and chicken. Sprinkle with salt and pepper.

Chile Lime Vinaigrette
Combine olive oil, rice vinegar, chile oil, honey, lime juice, salt, and pepper in a mason jar or bowl and shake/whisk until they come together.

Pour over the salad, toss, and enjoy!

    I do not care for bills either – but woo on working with your uncle’s catering company! That sounds like a ton of fun. :D And I can tell I’ll most def. be enjoying this salad this summer for sure – every flavor in it is FANTASTIC!
